Caldo de Pollo

When I first saw this over at my go to site for authentic Mexican food (La Cocina De Leslie) I couldn't believe it was that simple. And it is!! I love how it is just throwing everything in the pot and within an hour and a half, it's done!

What is it you ask!? CHICKEN SOUP!! This is definitely something to have on a cold winter's day .. or in my house, just a regular day in April. The last time I made this, I had spent the whole morning grocery shopping. I was in such a hurry to get the groceries put up, baby fed, homework done all before class. I didn't have time to stand in front of the stove to cook so I chose this. And it worked out because I had some veggies in the fridge that needed to be used ASAP.

CALDO DE POLLO (CHICKEN SOUP)
10 chicken legs and/or thighs
3 ears of corn, cut up into small sections
1 medium onion, cut in quarters
1/2-3/4 bag (small) of baby carrots
1/2 head of cabbage, cut into wedges
3-4 stems of celery, cut into chunks
2 cloves of minced garlic
Salt
Water

GARNISH
Lime, diced onion, serrano peppers



Now this is real simple. If you blink, you'll miss it. Ready?



Put all veggies and chicken in the pot. Cover with water. Season with salt. Bring to a boil for about 15 minutes, let simmer until chicken is done (60-75 minutes). And that's it!! What did I tell you?

Project Pinterest #2 - White Chicken Chili

Have I said how much my husband loves soups? When I first saw this, the beans caught my eye at first. Then the avocado and from there I knew I had to make this.

The only things I did to this was I didn't mince the onions and jalapenos .. For one my chopper's broke (*tear*) and second I knew he'd like the chunkiness. Also, I just cooked this on the stove top. I love the concept of the crockpot but there are times when I get the inspiration to cook something (mainly something I find online) and definitely do not have the time for the slow cooker. Oh and used one can less of the beans, which in the end worked out pretty well with the onions and jalapeno chunks.

Husband has yet to come home so I can get an official yay or nay but from the little tastes I had (it had jalapeno!! not my cup of tea) I thought it wasn't that bad!! :) I could tell it was very hearty though! Can't wait to see what he says!
